I made this recipe on a whim because it is mango season in Florida and was so impressed with how it came out! All my friends voted it tasted BETTER than the store bought salsa, plus no added gums, natural flavors etc.
After this experience I probably will not go back to buying salsa, and plan to make my own homemade ones with other flavors at home. You get so much for your money plus you can trust the ingredients!
Here is what you will need...
3 large tomatoes diced
4 mangos diced (I did 2 large, 2 medium)
1 red bell pepper diced
1 onion (I used sweet, but I bet red would be good too!)
1 cup water (I may try 1/2-3/4 cup next time I make it)
1 can tomato paste 156 mL
1/2 cup brown sugar
1 jalapeño finely diced (take seeds out to make it mild)
2 limes (squeeze the juice) Or 2 tablespoons lime juice
1-2 teaspoon salt
1-2 teaspoons chopped cilantro
Instructions
Chop up all of your ingredients and then add them to a large pot as shown below
Put it on medium heat until its at a boil, then reduce it to medium low / simmer and let it cook for 45 minutes to 1 hour. Stir every few minutes and make sure the mango is soft and all the ingredients have mixed well together with the consistency as show below.
Taste it as you go and adjust some of the ingredients based on your preference (i.e. salt, lime, sugar, jalapeño)
Let cool for 30 minutes
Pour it into jars or freezer safe containers/bags.
Eat it fresh and store the remainder in the fridge + freezer!
